This month we got to choose to do both cookies or just one. I was going to make them both, but then I got an order for some cupcakes so I had to just make one. I had been wanting to try homemade marshmallows for a while, so I made the Chocolate Covered Marshmallow Cookies.
I had fun with this challenge. The cookie base was easy, no surprises there. The marshmallows weren't difficult either, just sticky :) I left them out overnight to set up, maybe that was too long, as they are a bit more solid than I would like. The chocolate coating went on easily, but never set up at room temperature. After an hour in the refrigerator they were fine. Too much vegetable oil maybe?
Overall, good cookies! I would like to make the base cookie a bit more like a graham cracker next time for a more s'more like taste.
In the picture are the cupcakes I had an order for, French Chocolate Brownie Cupcakes with Chocolate Ganache frosting and the cookies around the edge. I had a very chocolate Saturday :)

Yum! Lovely cookies, and what sort of cupcakes are those? They look delicious.
I wish I could sneak into that photo and steal the plate! Perfect Mallows, and those cupcakes are to die for! Nicely done!
Beautiful mallows :) Cna i have one? Cheers!
Mine never set up at room temperature too and it seemed like too much veg oil to me as well. Not sure. :) Yours are lovely!
Great job on your challenge and the mallows look delicious. My chocolate didn't set either due to the heat, so had to pop them into the fridge.
I had the same problem with the chocolate -- I think it would have worked better with the cocoa butter, which is solid at room temperature. They sure tasted good, though!
